Lemon Ricotta Pancakes with Lemon Curd & Blueberries

  1. 1 1/2 cups flour
  2. 3 1/2 Tbsp granulated sugar
  3. 2 tsp baking soda
  4. 1 cup milk
  5. 3/4 cup ricotta
  6. 3 large eggs
  7. 1/2 tsp vanilla
  8. 1 Tbsp lemon zest (from about 2 lemons)
  9. 1/4 cup fresh lemon juice
  10. 2 Tbsp butter, melted
  11. Lemon curd (I use Trader Joe's)
  12. Blueberries
  1. Preheat an electric griddle to moderately-high heat.
  2. In a mixing bowl whisk together flour, granulated sugar, baking powder, baking soda and salt.
  3. Make a well in center of flour mixture and set aside.
  4. In a separate large mixing bowl, whisk together milk, ricotta, eggs and vanilla until well blended. Then whisk lemon zest with lemon juice and add to milk mixture along with melted butter and blend until combined (it will curdle a little).
  5. Pour liquid mixture into the dry mixture and whisk to combine. Batter should be slightly lumpy.
  6. Pour about 1/4 - 1/3 cup batter onto buttered griddle and cook until bubbles begin to appear on surface and bottom is golden brown, then flip and cook opposite side.
  7. Top the pancakes with the lemon curd and a handful of blueberries

  1. 5 Cups Old Fashioned Oats
  2. 1 Cup Brown Sugar
  3. 1 Cup Sesame Seeds
  4. 1 Cup Sunflower Seeds
  5. 1 Cup Sliced Almonds
  6. 1 1/2 tsp. Cinnamon
  7. 1 tsp Salt
  8. 1/2 Cup Vegetable Oil
  9. 3/4 Cup Honey
  10. 1/4 Cup water
  11. 1 1/2 Tbl Vanilla
  12. 1/2 Cup Craisins or any dried fruit
  1. Mix oats, nuts, brown sugar, salt & cinnamon. In a pot heat together oil, honey, water and vanilla until warm and mixture has thinned.
  2. Pour warmed liquid over oat mixture until thoroughly combined.
  3. Preheat oven to 350°
  4. Bake in sheet pan (with sides) for 30 minutes. Pull out of oven and thoroughly stir. Place back in oven and back an additional 15 minutes. Since ovens vary, keep a careful watch so as not to overcook. Granola is done when it is a dark golden brown.
  5. Stir periodically as granola cools. When cool, add dried fruit. Store in a tightly covered container.
